Learn how to make healthy Oatmeal Pancakes without banana or (wheat) flour! This pancake recipe uses a combination of rolled oats and oat flour to create light, tender, hearty pancakes that can easily be made vegan as well.

OATMEAL PANCAKES
1 cup rolled oats
1 cup unsweetened almond milk
2 eggs
1 tablespoon coconut oil, melted
1 teaspoon vanilla extract
1 tablespoon maple syrup
2/3 cup oat flour
2 teaspoons baking powder
1/2 teaspoon sea salt
1 teaspoon of cinnamon
1/3 cup chopped pecans

INSTRUCTIONS
Combine rolled oats and almond milk together in a large bowl. Let stand for 10 minutes for the oats to soften.

Add the coconut oil, eggs, and maple syrup to the oats, and stir to combine. Add oat flour, baking powder, and cinnamon and stir until just combined; do not over-mix. Gently fold in pecans.

Heat a nonstick skillet over medium-high heat and grease with some extra coconut oil (or whatever you prefer). Scoop 1/4 cup of batter and drop into the pan to make small-sized pancakes (I like to cook 3-4 at a time).

Cook until you see tiny bubbles appear on the surface of the pancakes and the bottoms are golden brown, about 2 to 3 minutes. Flip the pancakes and cook until the other side is golden brown, 2 to 3 minutes more.

Transfer pancakes to a warm oven or late and repeat until you have used all the batter. Serve and enjoy!

NOTES
Want to make this recipe 100% plant-based and vegan? Swap in one flax or chia egg in place of the eggs.
Have some fun with the stir-ins! Try mini chocolate chips, walnuts, diced apples, and pears, or blueberries. Make it your own.
Want to make this recipe for meal prep? Easy-peasy! Simply store the pancakes in an airtight container and pop them in the fridge for up to five days. You can also freeze them for up to 3 months.

I add ground nutmeg, ground cloves, pumpkin seeds and sunflower seeds in mine. I sometimes will add some of my protein powder in the batter for an extra protein boost.

I used water instead of almond milk and i forgot to put baking powder. I added blueberries and strawberries inside and it came out good. Thank you for this yummy recipe

This is my second time making this recipe! I use the batter with my mini waffle maker and it turns out great! I added an extra tbsp of coconut oil to the batter to make the waffles. Even my mom enjoyed it! Thank you! :)

Had to come back to let you know this recipe was so good, a new family favorite. I made these last Saturday and planned to serve them for breakfast through the week to my kids. Dani they never made it to the fridge! Kids ate them for lunch and begged for seconds.

Tried this recipe and love it!!! The recipe is very flexible so I use oat flour only (ratio 1-1 for flour and milk) and replace coconut oil with olive oil. The texture came out nicely! This pancake will be my daily comfort

I made these for the first time, yesterday, and I thought they were delicious! I loved the flavor and the texture. I used 1/2 tsp of cinnamon. They are a thin pancake, but are delicious! Thank you for sharing the recipe!

I just made these with whole wheat flour instead of oat flour and honey instead of maple syrup. I also mixed in fresh blueberries. They are so good!! What a fantastic recipe. My only suggestion is to soak the oats longer than 10min (more like 15 or 20) because they were quite gritty and "raw" tasting which messed with the texture a bit. But overall a great recipe, THANK YOU!!

Just made these and they turned out delicious. Instead of coconut oil I used some brown butter. Topped them off with bananas, hemp seeds, and walnuts. So good and so filling 🤤 Thanks for the recipe.

Me and my kids just made them and there delicious!! I used whole milk instead though since I didn’t have almond milk but they are so much better then regular pancakes and no guilt after eating them! My kids loved them. Thank you so much for this recipe.

They were actually really delicious 😳😍 I always had the mindset that the healthier version of a dish lacks of flavor or simply tastes “healthy”. But these were really good 👍🏻 I added some raspberries to the pancake butter and topped it with sugar beet syrup.
