This is a simple recipe for umami-laden fish glazed with a sweet soy-mirin sauce. You can use this for most fish. It's easy to make; it just requires a short period of time in the marinade and a finish in the oven. Enjoy!

I'm 76 and was the chef for a resort, hotel, and country club back in the 60's.We didn't use a lot of Sea Bass then. It was just coming onto the scene and there were more popular seafood's, like Halibut, Cod, Dover Sole, and Lobster.
I guess my wife and I don't have the refined palates needed to enjoy this meal, and I can't get my wife to experiment with expensive fish, and she won't let me do it. I LOVE fish, but I don't eat much meat these days Stroke issues. I love veggie meals too. I'm a freak for Lentils. Can you do a video on using Lentils to prepare a great meal?
