If I change my phone number and transfer the account. The status/account info stays the same. But does also the date of the status stay like it was before or does it change? For example if my „Hey there I am using WhatsApp!“ was from 2015. Will it stay 2015 after Account transfer or does it change to 2023?

You forgot to mention, to make a backup, after changing the number, because the Cloud backup is associated with you'r old number, so you won't be able to restore you'r backup after reinstalling WhatsApp.
