Yum! These are way underrated. I looked this up to see if they're low in carbs (which I doubted, since they're tubers), and I learned they are a root of a sunflower like plant! How cool! I guess that's where the "sun" part comes in. I have sunflowers growing in pots outside right now. When they're done, I'm going to see if there's a tuber down there...

I got my first harvest last week and I'm 1000% certain I'll have at least twice as many plants next year after all the smaller tubers I left behind. Hopefully the deer will pay more attention to them than the young trees!
