I love how after checking out your channel I figured out I've been using basically Ermine buttercream for a cake we do here in my country. I checked out your recipe for it and I used the tips you suggested when I made it again and it actually turned out even better than usual, so thank you so much!

I'm German and I definitely like German buttercream the most😀 The pudding makes it less buttery which I like.

Now I finally understand why my German aunt who is a baker and pastry chef, wanted me to add pudding into my buttercream. I legit had no idea why or how that would fit buttercream. Lol I don’t know my own baking heritage 😂

My boyfriend insists on Ermine. Substitute the 5 TBS of flour for 4.5 TBS of a gluten free flour blend to make it gluten free, works the exact same.

I really like the Swiss one! So easy to make for a 12yo like me. The meringue takes some time to reach stiff peak, but it's worth it. Not too sweet, and silky smooth.

For me, nothing beats the flavor and texture of Ermine frosting. It's soooo good on carrot, red velvet, or gingerbread cakes

So the content is excellent but can please take a moment to admire how lovely her voice is? Like so many shorts are voiceovers in that TikTok voice or people talking loud and fast basically emulating it. This was so peaceful. I like baking anyway but even if I didn’t I would be like “why yes I would like to hear about the different kinds of buttercream, please continue” and immediately be captivated lol.

Ermine is my favorite hands down, smooth and creamy, sweet without being cloying. Delicious, dang! now I want cake.

This is great to know because I've had a lifelong hatred of (American) buttercream. Whipped cream is my go-to frosting but it doesn't do so well in certain situations. I'll be testing out ermine on my next cake!

I lived in Germany for almost 2 years. I loved going to the little neighborhood bakeries. They had the most beautiful cakes that you could buy by the piece. However, no matter how gorgeous they looked, the frosting/icing was not nearly as sweet as American frosting. Quite a shock to my taste buds at first! I learned to enjoy it. Thank you for your demonstration of the different varieties!! 🍰✨✌️

Ermine is severely underrated. I don't like extremely sweet things and tend to use it on all of my cakes. It's got a perfect level of sweetness so that it doesn't overpower the cake, and pipes really nicely. Ever since my first time making it, it's been my go-to.

ermine is the best.. especially in my family, because we hate anything too sweet haha. i made ermine once for a casserole dish cake and my parents went on and on about how nice the frosting was

I used ermine for the first time and I love it. I was making mini cupcakes and it allowed the taste of the cake to still come through since the frosting wasn’t overly sweet

This is so informative. I always hated how overly sweet buttercream was and thought it ruined anything it was on. Now I can just make a less sweet buttercream!
