I love how after checking out your channel I figured out I've been using basically Ermine buttercream for a cake we do here in my country. I checked out your recipe for it and I used the tips you suggested when I made it again and it actually turned out even better than usual, so thank you so much!

My boyfriend insists on Ermine. Substitute the 5 TBS of flour for 4.5 TBS of a gluten free flour blend to make it gluten free, works the exact same.

I really like the Swiss one! So easy to make for a 12yo like me. The meringue takes some time to reach stiff peak, but it's worth it. Not too sweet, and silky smooth.

This is great to know because I've had a lifelong hatred of (American) buttercream. Whipped cream is my go-to frosting but it doesn't do so well in certain situations. I'll be testing out ermine on my next cake!

I lived in Germany for almost 2 years. I loved going to the little neighborhood bakeries. They had the most beautiful cakes that you could buy by the piece. However, no matter how gorgeous they looked, the frosting/icing was not nearly as sweet as American frosting. Quite a shock to my taste buds at first! I learned to enjoy it. Ermine is severely underrated. I don't like extremely sweet things and tend to use it on all of my cakes. It's got a perfect level of sweetness so that it doesn't overpower the cake, and pipes really nicely. Ever since my first time making it, it's been my go-to.
