Easy Fish Soup🦈Did You Know This Recipe??

Ingredients:
In a large and spacious pot we will add 1 ½ to 2 kilos of fish for soup.
I have: ▪ 1 redfish and ▪ 1 cod.
We can use both fresh and frozen fish for our soup. The best fish isfresh. Ideal fish for the thick soup are rockfish. They are small, but their taste is something else. But all fish will do.
Initially I add: ▪ 2 liters of water, then I will add more ▪ 1 liter of water in total I need (3 liters of water)
▪ 1/2 teaspoon of salt
Before boiling our fish we will remove the scales, we will clean the entrails and gills and if necessary we will also remove the head. We will wash it very well and add it to the pot. If necessary we will also cut the fins.
▪1 kilo of potatoes / Big secret: We never wash the
potatoes in fish soup, we need the starch.
▪1/2 teaspoon salt
▪1/8 teaspoon black pepper
▪2 large onions (We cut the onions into 8 equal pieces.)
▪2 medium carrots
▪3 - 4 celery stalks (including the green part)
▪1 cup extra virgin olive oil (200 g)
▪1 cup small (90 - 100 g) rice (Carolina or glazed or small pasta)
▪Juice of 2-3 lemons
Olive oil - salt - pepper and lemon (at will )
We can add: ▪3-4 small zucchini and ▪1-2 tomatoes without the skin cut into 4 or 6 pieces.
Casserole: Boil with the pot half-covered, on medium to high heat for 30΄ - 40΄ from the time they come to a boil. We never cover the pot because then the fish smells very strongly. Always on high heat.
If we want, we can add only the juice from the lemon or we can also make avgolemono. At the bottom of the description you will find the link: For the Avgolemono.
If you add more water than normal, you will melt a potato to help your soup thicken better and faster.
