I do this with potatoes but I use tallow and duck fat, 1/2” in a cast iron pan 425 for 45 minutes. Flipping once.

I do my roast in a crockpot, falls apart after 8 hours on low, add in potatoes after a couple hours, then carrots when there’s a few hours left.
