Way more effective to leave the shims in place until the door is fixed into position. That way you can tap on them as necessary for final adjustment. Then oscillate off the remainders.

Pro tip, that oscillating tool held flat against my zipper area feels really good

Exactly. One helpful step further is to use shims at least as wide as your hinges.

In a location like that, I never hang the door plumb. Always use a tape and make sure the measurement is the same top and bottom and cheat the casing on the strike side if I have to.
Too many times hearing " the door's crooked when, in fact, the wall is out.
Doesn't have to be plumb, just has to look plumb.
