In math you also have lemmas, which are kind of like theorems, in the sense that they are provable by way of axioms and other proven propositions but they don't carry as much importance as theorems

The theory investigating the thermodynamics, has been deemed as theorum. It is largely theoretical, but uses practical methods such as observation. It was brought into being by a hypothesis which questioned the predecessor of the current theorum. It uses the postulates from 19th century, greatly modifying them. One could say that it's a corollary of the research of that time. It's creation helped to understand various phenomena. Scientists nowadays consider it an axiom, and are baffled by how could they ever think otherwise.

Could someone help me think of a more formal word for 'baffle'?

Hypothesis, greek "place under"... maybe this developed because you're making an idea under, like a foundation for something that's being discussed. When you place bricks as foundations for a building.
