Almonds are nutritionally packed and should be taken regularly for maximum benefit. They are rich in healthy fats, protein, fiber, minerals such as zinc, calcium, magnesium etc. However to ensure that these nutrients are absorbed properly we have to take them in the soaked form overnight for about 8 to 12 hours, as they contain a compound called as tannins which are inhibitors, which inhibit the nutrient absorption. Apart from this, when the almonds are soaked they release an enzyme called as lipase, which helps in the digestion of fats, thereby resulting in a better digestion. Soaked almonds help in regulating blood pressure, diabetes and also helps in reducing your cholesterol levels. They are also rich in insoluble fibers. Thereby helps in preventing constipation. Also their folic acid level helps in maintaining a better nervous system and when consumed during pregnancy, helps in the good development of the fetus. Hence soaked almonds are much higher in terms of nutrient availability.

Just I want to add a little here. It is not just soaking almond but peeling off the skin after soaking and flushing out with water helps to eliminate anti-nutrients very much. You might think you may loose fibers but almond has a lot of soluble fibers. So you would be fine without the skin. In fact outer skin causes digestion issue for some people. Another very important thing about almond to note is that it resides almost at the top in the list of high oxalate food. Those who don't know, oxalate is the primary cause of kidney stones, at least for some people. Oxalates binds with calcium from blood and forms Calcium oxalate crystal to pass through kidney and urinary track with urine causing pain. Sometimes it stays deposited in kidney and urinary track causing frequent pain while passing urine. It might also cause Calcium deficiency when coupled with absence of insufficient absorption or production of Calcium ( insufficient Vitamin D or Parathyroid hormone disorder). It was found that soaking overnight and then peeling off the skin after a little boiling ( may be 15 secs in microwave) removes most of part of oxalate from almonds. Thanks

Take a cup of water and soak a handful of almonds in it. Cover the cup and let the almonds get soaked for six to eight hours. Next morning, drain the water, peel off the skin and have them fresh.

insted of soaking for 8 to 10 hr to peel the skin, we can peel it by putting it in hot water for 2 minutes. Why dont we do like this?
