Chocolate Lava Cake
Ingredients
Makes 6 servings

3 eggs
4 tbsp sugar
6 ounce (170g) dark chocolate
2 tbsp flour
1 stick (110g) butter
1 tsp vanilla extract
pinch of salt

1. Butter six ramekins, or aluminum muffins molds and dust with flour.

2. Melt chocolate and butter over a bain-marie until smooth. Meanwhile beat the eggs with sugar and salt using a whisk or mixer until thick and light yellow. Mix in vanilla extract and flour. Gradually add the melted chocolate and stir well. Pour mixture into the prepared molds.

3. Preheat oven to 200°C (400°F). Bake for 10 minutes until the edges are firm and the center is still soft. Remove and let cool slightly for few seconds. Run a sharp knife completely around the inside edge of the molds and invert onto plates. Sprinkle powdered sugar on top, and serve immediately.

Holy sh-t! I was expecting a mess since this is my first time baking, but it actually turned out to be DELICIOUS!
The batter was even enough for 10 servings instead of 6.
The only problem I had was that the chocolate inside wasn't that liquidy, but it's because of my oven. I think I pre-heated it for too long... 30 minutes. And then baked for 10 minutes. I still have to experiment with its settings and temperature.
Edit: I DID IT! IT'S A VOLCANO! I only pre-heated the oven for 5 minutes and then baked for 5 minutes and it's perfect!!!

I baked this several times and surprised they always taste great. You'd think they'd taste really off since 3 eggs seems a lot, but that wasn't the case. Just be sure to beat the eggs really well.
The chocolate is molten inside too as shown in the video. I substituted maple syrup for vanilla extract one for one, didn't have to reduce the sugar. My ramekins were apparently too big as I got 3 instead of 6 servings out of them, which meant I had to bake it a little longer. Nonetheless they still turned out great.

I see FAQs here so I'll take one for the team:
Q1- What flour is used?
A1- All-purpose flour should be sufficient. (used in the video) It's what I used to bake them. It doesn't need leaveners either, I saw someone asking if this needed baking soda/powder.

Q2- Do you use salted or unsalted butter?
A2- The butter used in the video is unsalted, but I used salted butter in mine. Either is fine.

Q3- Must this be immediately eaten? Can they be refrigerated?
A3- You can leave it for a while and can also refrigerate them, just slightly heat them up later to bring back that lava feel.

Q4- I don't have tablespoons/teaspoons, what are the alternative measurements?
A4- Sugar (50 g), flour (15-20 g), vanilla extract (5 ml)

Q5- What powder is added at the end?
A5- Powdered sugar, or confectioner's sugar.

Q6- The top center of the cake is gooey after I finished baking, did I do something wrong?
A6- It's still hot, you don't eat it right after it's out of the oven. Let it cool down for a few minutes and it will solidify.

The key is always to experiment until you get the desired results. The temperature was fine but I had to increase time. This will vary depending on the equipment used.

Try cocoa powder instead of flour to dust the ramekins - works as well as flour but looks better😉.

Just a few tips:
- no need to take so many steps, the cake will come out good even if you mix it all up at once.
- put a square of chocolate bar at the center of the cake. That way you can be sure you'll have a solid cake on the outside and a flowing heart. It can even be white chocolate.

I tried this and Amazing!!! I used the best swiss chocolate. I used ceramic muffing molds 10 minutes, they were still perfect!. This is the kind of thing you should eat when you craving for chocolate.

I've noticed that when I use dark chocolate then its alot richer in taste. Also go for a good quality chocolate. But dark is best in my opinion for this 👍😊
