Sunny's Easy PB&J Swirl Bars

Ingredients

Crust:

Nonstick cooking spray, for the pan
3 sleeves (28 crackers) butter crackers
1/3 cup packed light brown sugar
3/4 cup (1 1/2 sticks) salted butter, melted

PB&J Layer:

1 1/2 cups creamy peanut butter
1/2 cup light brown sugar
3 tablespoons unsalted butter, melted
1/2 cup seedless strawberry jam, lightly whisked to loosen

Directions

Make the crust. Spray an 8-inch square metal baking pan with nonstick cooking spray. Line with parchment paper, allowing the parchment to overhang the edges of the pan. Spray again and set aside.

In a food processor, pulse the crackers, brown sugar and butter until combined and it resembles wet sand. Remove and press into the bottom of the pan. Refrigerate for an hour.

Preheat the oven to 350 degrees F.

Make the PB layer: In a stand mixer or with a hand-held mixer, beat the peanut butter, brown sugar and butter in a bowl until smooth. Remove the pan from the refrigerator and spread the peanut butter mixture evenly over the bottom layer.

Add the jelly swirl. Drop about 9 dollops of the jam around the pan. Use a skewer or butter knife and drag it through the jam and peanut butter to make swirls.

Bake until set, about 30 minutes. Allow to cool completely, then remove from the pan and cut into bars the size of your choosing.

I record most all of The Kitchen shows, then binge watch, sometimes at 2:00 in the morning when everyone else is asleep! I happen to see this one yesterday morning, knew I had all the stuff, and made for dinner last night. It was good. I will add a touch of vanilla flavoring to the PB layer, probably mix it up with chocolate bits, even pecans in the future. Keep 'em coming Sunny!

I wonder how a little bit (1/4 tsp or so) of vanilla extract in the peanut butter mix would work out. In my head, it sounds like it might be nice, but i could be wrong. Any professional chefs out there weigh in?

Oh, or maybe come chunked up dark chocolate chunks in the PB, to get a reeses type flavor in addition to the jam.

But i tell you what, i would eat these just as they were made. I love PB&J.

Nice... a recipe without eggs. This could probably be a no bake, as well. The various are endless. I add dollups of crunchy peanut butter and fresh fruit in with the jam, as an option to stretch the recipe.

Heads up Food Channel: In Cranberry Township in PA at Jason's Deli, just off I76, there's a young lady that looks like Katie Lee, so much so, she looks like she could be her sister. I was in there recently and even showed her a picture of Katie Lee, and she agreed, she does look like. So Food Network, go there and see for yourself. I didn't ask her her name but she works in the afternoon during lunch time.
