I've finally tried the viral sushi wrap hack, and I love it so much that I've been having it on repeat! It packs all the flavour of sushi but is much quicker to make. I've experimented with and without the rice paper roll, and I recommend adding one to make the wrap sturdier. It's incredibly delicious and definitely lives up to the hype! I've made a simple peanut tofu for this recipe, but it's super versatile and pairs well with many flavours. I also loved adding hoisin to it.

Peanut Tofu Ingredients:

- 300g tofu, sliced
- 2 tbsp tamari
- 1 tbsp sriracha
- 1 tbsp rice vinegar
- 0.5 tbsp maple syrup
- 2 tbsp smooth peanut butter

Peanut Tofu Instructions:

1. Combine all the tofu marinade ingredients. Stir in the tofu and let it marinate for up to overnight (the longer, the more flavour it will have).
2. Bake the tofu in the air fryer at 350 degrees F (180 C) for 15 minutes, or bake for 20 minutes at 400 degrees F/200 C in a conventional oven.

Sushi Wraps

Ingredients for 1 wrap:

- 1 nori sheet
- 1 rice paper sheet
- 1/8 cup cooked sushi rice
- 2 slices of marinated tofu
- 1/4 avocado, sliced
- 4 slices of cucumber
- 1 tbsp of sliced spring onions
- 1/2 tsp of sesame seeds
- 1/2 tsp of sriracha

Instructions:

1. Soak the rice paper roll in lukewarm water for 5 seconds. Cover the nori sheet with the rice paper roll. Cut an incision in the middle of the bottom side, going halfway.
2. Place the sushi rice on the bottom left side, tofu on the top left side, avocado on the top right side, and cucumber on the bottom right side.
3. Top with sriracha, sesame seeds, and spring onions.
4. Fold according to the order shown in the video. Enjoy!
