Hi Chef Rachida, I've come across brioche recipes that don't require hours of refrigeration and proofing. I remember proofing only 30mins or so in a proofer, and only another 20mins after rolling and shaping. Is there a huge difference to the product quality/texture doing it that way?

I got a norpro 6-count nonstick donut pan as a Christmas present last year. It lets me bake donuts instead of frying them. I haven't tried it yet. Would your recipe work well if I made the dough and then baked it in the oven for 350 degrees?
