Vegan Mushroom Stroganoff | Ready in 30 minutes or less!

Here's a pasta dish you can whip up in less than 30 minutes, perfect for a quick meal. Flavourful and oh so tasty, you'll be coming back for seconds!

Yield: 4 servings
Ingredients:
250 g pasta of choice
1 Tbsp olive oil
100 g | 1 medium onion, chopped
5 cloves of garlic, minced
375 g | 5 cups mushrooms (cremini or baby bellas), thinly sliced
30 g | ¼ cup all-purpose flour
240 ml | 1 cup vegetable broth
120 ml | ½ cup pasta water
1 Tbsp miso paste (if unavailable, use total 3 Tbsp of soy sauce instead)
2 Tbsp soy sauce
1 Tbsp classic yellow mustard
240 ml | 1 cup non-dairy milk (we used cashew milk)
¼ cup nutritional yeast flakes
½ tsp dried thyme, optional
1 tsp paprika powder
salt and pepper to taste

Garnish (optional)
vegan parmesan
chopped parsley

Looks fantastic! If you want some added protein, Gardein makes really good vegan ground "beef" and "meat"balls. Textured Vegetable Protein (TVP) is also a great option and you can season it with broth, miso, soy sauce and liquid smoke. Marmite is also good to give TVP a beefy flavor.
