Ingredients
Custard Sauce
3 egg yolks
30 g caster sugar
20 g cornstarch
250 g milk
20 g unsalted butter
Dough
200 g bread flour
20 g caster sugar
2 g salt
3 g instant yeast
105 g milk
1 egg
20 g unsalted butter
Instructions
In a clean bowl, mix well 3 egg yolks, sugar and cornstarch. Heat 250g milk until boil, pour into the batter while using a whisk quickly mixing them well. Pour the liquid back into the pot, heat and whisk until thickened. Add in 20g unsalted butter, mix until well combined, transfer into a clean bowl, cover it plastic wrap and let set in the fridge to cool.
In the stand mixer bowl, bring together bread flour, 20g caster sugar, salt, instant yeast, milk, 1 egg, beat in medium high speed until it all comes together. Add in 20g unsalted butter, and beat until well combined.
Divide the dough into 6 pieces. Roll into dough balls, cover with plastic wrap and let rest for 20 minutes.
Roll each dough ball flat and round, put in enough custard sauce, and pinch the seam. Let rise for 35 minutes.
Grab a pan, place in two or more buns, put on the lid, over low heat, and cook each side for 5 minutes or until golden brown. Transfer to a clean plate and serve.
