Delicious Custard Buns Recipe 🤍

Soft yeast buns with chocolate chips and a silky diplomat cream filling – perfect for special occasions or simply to enjoy! 🥰

📝 Ingredients

For the dough:

• ⁠ 250 g all-purpose flour (2 cups)
• 30 g sugar (2 1/2 tbsp)
• 1/2 tsp salt
• 125 ml lukewarm milk (1/2 cup)
• 1 tsp instant yeast
• 40 g softened butter (3 tbsp)
• 1 egg (size M)
• 50 g chocolate chips (1/3 cup, baking stable)

For the diplomat cream:

• 250 ml milk (1 cup)
• 1 tsp vanilla extract
• 3 egg yolks (size M)
• 40 g sugar (3 tbsp)
• 20 g cornstarch (2 tbsp)
• 100 ml whipping cream (1/2 cup, cold)
• 1 tsp whipped cream stabilizer

Additional:

• 1 egg yolk (for brushing)
• Powdered sugar for dusting

🤍 Instructions:

1. Sift the flour into a bowl, create a well, and dissolve the yeast with 1 tsp sugar in a small amount of lukewarm milk. Pour it into the well, cover, and let rest for 10 minutes until foamy. Add the remaining milk, sugar, salt, egg, and butter. Knead into a smooth dough for 5–7 minutes. Cover and let rise for 1 hour until doubled in size.

2. Flatten the dough, sprinkle with chocolate chips, and fold several times. Knead thoroughly to distribute the chocolate evenly.

3. Divide the dough into 10 pieces (50–55 g each). Shape into balls, place on a baking sheet, and let rise for another 30 minutes.

4. Preheat the oven to 180°C (356°F) top/bottom heat or 160°C (320°F) fan. Brush with egg yolk, optionally add extra chocolate chips, and bake for 15–18 minutes until golden. Let cool.

5. Heat the milk with vanilla extract until nearly boiling. Whisk egg yolks, sugar, and cornstarch in a bowl, then gradually add the hot milk while stirring. Return to the pot and cook over medium heat until thickened. Cover with plastic wrap and let cool. Whip the pudding, whip the cream with stabilizer, and fold together.

6. Slice buns horizontally, fill generously with cream, and dust with powdered sugar.
