Short answer he just vanishes after defeat and seems to be really weak for being the most powerful wizard in the forgotten realms :D

That, my friends, is a simulacrum!

In D&D 5e, Simulacrum is a 7th level that creates a living (well, construct) of the caster. The simulacrum is created with all of your stats, except having half your hit points and none of your equipment. Part of the material components for the spell is snow and ice that you shape into a lifelike replica of yourself, from which the simulacrum is animated. That animation of Elminster dying and falling apart into white particles is actually just the simulacrum dispelling after being destroyed.

if you go to the moutain pass route he will spawn as level 20 and if you kill him it give you 1000 xp

If you kill Elminster, then after some time Gale leaves the squad with a farewell note saying that we cannot solve his problem with the curse and he decided to leave.

I've been reading the D&D novels since AD&D 2nd edition. I know the rules have changed and his status as a chosen of Mystra changed dramatically in the latest edition but he has over 1000 years worth of magical knowledge. He has enough contingency spells casted on his person to prevent most conventual death. He is probably using a simulacrum as someone mentioned below but he definitely owns a magical rings and trinkets that give him Stoneskin, mage armor, mage shield, blur, displacement, and many other low to mid level defensive spells. Also those contingency spells I mentioned before. They dont have them in BG3 cause they are very situational. Its like having AI for wizards.

You can tell it's only a simulacrum because he didn't cast "You Done Fucked Up" on his first turn.

What strange is - if you check his race he is Construct, like Bernard, Greem and another robots . And probably first thought with my friends was - robo copy of him, but IF you kill him Gale will literally DISAPPEAR from you camp, you don’t even see any animation or massage like “someone left your party” so I really don’t know what is true :
-tnx for DND battle system that mage 20 level without support of party that will protect him can die because of mad party of homeless killers who believes in BUAAAAL name
-or we have robot that like to eat cheese 🧀 from your camp

From the spell Simulacrum in 5e:
"If the simulacrum is damaged, you can repair it in an alchemical laboratory, using rare herbs and minerals worth 100 gp per hit point it regains. The simulacrum lasts until it drops to 0 hit points, at which point it reverts to snow and melts instantly"
From Jeremy Crawford, 5e designer: "To restore hit points to a simulacrum, you must use the costly alchemical procedure mentioned in the spell"
This leads me to wonder wtf Elminster here has been brewing to be able to restore twelve hit points when his simulacrum drinks it. World's dandiest healing potion?

My theory, since he shows up as a "construct" type at times - is that this is just a magical simulacrum, clone, or homunculus or something of him and the actual Elminster is somewhere else doing his thing.

Elminster is a Planeswalker when they are close to death they automatically planeswalk as a survival mechanism.

So, there is 2 of them and both are constructs, that means my mans broke limitations of the spell and is cranking out simulacrums like some xvarts.
He just wakes up in the morning, makes another simulacrum, sends it on a merry way to save the world so he can focus on his experiments.
