The thing is that Voldy didn't only want to kill Harry [as he has several occasions to do it ], he wanted to revenge harry and prove the Wizarding world that Harry destroying him (as a child) was just an accident and voldy was much more superior than Harry
Take example of the graveyard scene, if voldy only wanted to kill Harry, he could have just casted Avada Kedarvra, but he wanted to show off about his powers and superiority and wanted to showcase Harry s helplessness
