100% whole wheat flour
90% hydration
20% sourdough starter
2% salt
2 hours autolyse
6 hours warm fermentation at 76F with 4 stretches and folds
20 hours cold fermentation at 40C
Baked 500F for 15 min with lid on
450F for 20 min without lid.
