Chocolate Bourbon Pecan Pie

With Thanksgiving right around the corner this dessert is a must! The Bourbon really gives it a nice flavor and you will have to enjoy a cocktail After! Happy holidays!

Ingredients: For the filling:
3 Eggs
1 Cup Dark brown sugar
2 Tbsp. Butter
1 Cup Light corn syrup
1 Tbsp. Vanilla extract
4 Oz. Bourbon ( And some for you )
1/2 Cup Chocolate chips
3 Cups Chopped pecans
2 Oz. Molasses
Pinch of salt
For the crust:
1 Cup All purpose flour
6 Tbsp. Butter ( Cold )
1 Tsp. Baking Powder
1 Tbsp. Cocoa powder
1/4 Cup Ice water
Procedure:
1. Pre-heat the oven to 375 degrees.
2. In a large sauce pan melt 2 Tbsp. of butter over medium heat. Add the pecans and "toast" them by stirring constantly for 3-4 minutes.
3. In a large bowl, combine all the filling ingredients and set aside.
4. In a large bowl combine the flour, baking powder, and cocoa powder.
5. Spread the cold cubed butter around the flour and try incorporating it in with 2 forks. At this point get into it with your hands and really break up the butter into the flour. The consistency should be flaky when done.
6. Add about 2 Oz. of ice water. Combine thoroughly.
7. Add more ice water until a dough ball is formed. The dough should not be wet and sticking to your hands.
8. Cover the dough with saran wrap and refrigerate for 20 minutes.
9. Flour a flat surface as well as a rolling pin. Carefully roll the dough out till it is about 13" in circumference.
10. Carefully place the dough in your baking dish. Press the dough so it comes in contact with all sides of the baking dish.
11. Crimp the edges of the dough to create a cool rustic look.
12. Add the filling mixture and bake for 45 minutes on a lined baking dish. Allow to cool thoroughly before serving.
