Shipwreck Skillet Casserole – Cheap 1 Pot Dinner in 30 Minutes – Hard Times
Shipwreck Skillet is a Hamburger Casserole that you can cook on the stove top without heating the house up. It is a simple, one pot dish that is perfect for any weeknight dinner and you can have on the table in less than 30 minutes. The variations are virtually endless. It's easy, affordable, and delicious. You can make it with the ingredients that you already have on hand.
Ingredients:
1 lb Ground Beef
1 cup Milk
1 box Mac & Cheese
1 can Tomatoes
1 cup or can Corn
1 cup or can Peas
1 cup Cheese
Salt & pepper to taste
Optional - 1 cup of chopped green bell peppers or onions, leftover beans, spices and seasonings, just about any leftovers in the fridge
Granny’s Ham and Tater Soup – Depression Cooking Ham and potato soup has endless variations and is the perfect way to use up some leftover ham, fill your belly and warm up a cold winter day.
This is an easy, hearty soup that you can modify to use what you have on hand and suit your taste. This was always a favorite at my Granny’s house, and I don’t believe it was ever exactly the same twice because she used what she had. It is exactly what she was talking about when she said, “You need a pot, something to put in it and heat to cook”. So put a pot on the stove and cook up a pot of soup.
Ingredients:
8 ounces Diced Ham
4 cups Diced Potatoes
½ cup Diced Carrots
½ cup Chopped Onions
½ cup Chopped Bell Pepper
½ cup Chopped Celery
½ cup Butter
2 cups ½ & ½ or Milk
1 to 2 cups Water
Salt & Pepper to Taste
S.O.S. - Hamburger Gravy
S.O.S might not save our souls, but it’ll sure help your budget and fill your belly. I have made as many as 6 cups of gravy using a single pound of ground beef and fed an army of teenagers with it. This is a super simple, easy, fast meal, which makes it perfect for weeknight dinners. SOS is one of those recipes that are going to help us through the ongoing shortages and skyrocketing food prices.
The flavor is incredible, you can stretch it almost endlessly, and you can make it for any meal – breakfast, lunch or dinner. Every now and again Bret, an Army veteran, submits his supper request for S.O.S. and I cook him some up with homemade hash browns and scrambled eggs on the side. Our kids love it too. They are married now, and they cook it up for their husbands on a fairly regular basis for breakfast or supper.

1 lb. Ground beef
1/4 Cup Flour
2 Cups Milk
Onion Powder, Salt and Pepper to Taste
Optional – 1 teaspoon Beef Bouillon per cup of liquid

Poor Man’s meal has been a staple in struggling homes for nearly a century. It got us by when we were kids, and it will get us through now. It is easy fast simple comfort food that satisfies empty bellies and picky pallets. It’s time to revisit Granny’s kitchen for some of her super cheap meals.
