Coffee Cake for One | Single Serve | Microwave or Oven Version

This single serve coffee cake for one is perfect when you are craving a little sweet breakfast treat. It takes only a few minutes to mix together and you can cook it in the microwave in 45 seconds or in the oven under 15 minutes.

Ingredients:
1 Tbsp butter, salted, melted
1 Tbsp granulated sugar
3 Tbsp all purpose flour
1/8 tsp salt
1/4 tsp baking powder
1 Tbsp milk or water.
1/4 tsp vanilla extract.
Streusel Topping:
2 tsp brown sugar
1/ tsp butter, salted and softened
1/8 tsp cinnamon.
Glaze:
2 Tbsp powdered sugar
1/2 tsp vanilla extract
enough milk to make a nice drizzling consistency.

Directions:
Grease a 6 oz. ramekin with non stick baking spray.
In a bowl, melt butter.
Add in sugar, flour, salt, baking powder, milk and vanilla extract.
Stir to combine and pour into prepared ramekin.
In another bowl combined streusel topping ingredients. (can double if you like a lot of streusel topping).
Sprinkle on top of cake batter.
Swirl in with a knife.
Bake at 350 degrees F for 12-13 minutes of until set, begins to pull away from sides of ramekin . Or you can microwave it on high for 45 seconds, if not done, add another 15 seconds.
Mix together glaze ingredients until you have a nice glazing consistency. Drizzle over warm coffee cake and enjoy!

Glad I asked my daughter to bring home some brown sugar as I love sweet fall treats. I have a Pinterest page called cooking for one because when you’re 70 years old, you do a lot of cooking just for yourself and it’s much easier to find small tiny recipes if you can.

FANTASTIC! baked in my 40 year old microwave which isn't as powerful as newer ones, took a little over 1 minute. Only thing I did different was to add a few finely chopped pecans to batter before baking! Tasted GREAT!

Double the streusel..put half the batter in the ramekin, then half the streusel, then the remaining batter and the remaining streusel. Top with the drizzle…YUM!

Thanks for the great recipe! I had to go to the kitchen and make it right away. Typically, I'm always short of ingredients so I had no powdered sugar for glazing but I made some (processed granulated sugar with a tiny amount of corn starch in a mini blender). Don't have a microwave and I didn't want to heat up the kitchen with the oven so I cooked it in the air fryer with good results, although next time I'll put the streusel in the middle as a layer.

Hello! Thank you so very much. I remember as a 11 YO child loving my Drake's coffee cakes. Unfortunately, today they are filled with so many chemically made ingredients that I have stopped eating one of my fav desserts. Great video. I needed a game night snack for meeting my old hometown friends online for some gaming. Playing Valheim, building our in game outdoor kitchen and taking breaks for a good nibble while the thunder rolls through, in game. Waiting for our, in game, carrots to mature.
