🍰 Ingredients:

4 Eggs
Sugar 175g (¾ cup, 2 tablespoons)
Salt ¼ teaspoon
Oil 80ml (⅓ cup)
Plain flour 200g (1 1/3 cups)
Baking powder 1 ¼ teaspoons
Vanilla extract 1 teaspoon
Almond essence ½ teaspoon (optional)

Milk 80ml (⅓ cup)
Instant Coffee 1 ½ tablespoons

For the Coffee Buttercream:
Powdered Sugar 200g (1 ¼ cups, 2 tablespoons)
Butter 100g (7 tablespoons)
Instant Coffee 2 teaspoons
Milk 1-2 tablespoons

Some chopped Cashew nuts (optional)
Melted Dark Chocolate (optional)

Measuring cup size - 240ml
20x20 cm Baking pan

Bake in a preheated Oven at 170c (338f) for 35-40 minutes

I was looking for a coffee flavoured cake and this was just perfect. Quick, easy and more importantly really delicious! I just added more coffee powder to the batter because I wanted a bit more of its flavour, but it could be that my coffee wasn't really good so I needed more! I also made a coffee whipped cream for the top.

Best to always sift flour salt and baking powder together and then add to wet mix. Shouldn't add baking powder separately on its own. Iv been baking cakes for nearly 70yrs. I watch because I'm always interested to see the methods people use. Your cake looks lovely and moist
