Put the butter from the refrigerator (still in the paper) into a zip lock bag and close tightly (I use the ones with the zipper pully thing). Put in a bowl and cover with warm water. After 5 or 10 minutes the butter is properly softened throughout without the melted parts you get when you use the microwave. Do the same thing with cream cheese.

Carrot cake is my husbands choice for his birthday, and he loves ginger, too (so do I), so I add finely minced crystallized ginger, grated fresh ginger, AND ground dried ginger to the batter. I use a lot, but it’s just to taste. The ginger goes really well with carrot cake.
