INGREDIENTS:

We are makiing Ube Brazo De Mercedes Red Ribbon Style today - a Filipino Purple Yam Rolled Into A Meringue. We are adding ube to the usual custard filling. Join me, this is exciting.

For the Ube Custard Filling:
10 egg yolks, beaten
7 oz (1/2 of a can) condensed milk
1 cup whole milk
1 tbsp ube extract
1 cup ube halaya [240 mL]
4 tbsp softened butter [57 g]
2 to 3 drops purple food coloring (OPTIONAL)

For the Meringue:
10 egg whites
1 teaspoon cream of tartar
3/4 cup granulated sugar
