Recipe:
1. Seive 1 cup besan in a bowl and add 1/2 cup water, 1/4 tsp baking soda and a pinch of turmeric powder. Mix well to form a smooth batter.

Consistency of the batter is the key to make the perfect boondi. You can add 1/2 - 3/4 cup of water to reach the desired consistency. If it’s too watery, it’ll fall like noodles and if too thick, it won’t go through the tool you are using.

2. In a kadhai, add ghee and once it’s hot, pass the batter through a ladle or a similar tool as shown in the video. Fry them until golden brown.

3. After that, take a pan, add 1 cup sugar, 1 cup water, 2 pods of elaichi and a pinch of turmeric powder. Mix well and let it boil to form a sugar syrup.

4. Then add the fried boondi to the sugar syrup and coat it well. Top with some melon seeds and it’s ready!
