Ingredients:
1 cup brown rice
1/2 cup boiled red beans(Pinto beans)
1/2 cup chopped onion
1/2 cup chopped tomatoes
1/3 cup boiled sweet corn
1 cup cilantro chopped
1 cup sliced capsicum
1/2 cup sliced onion
1 whole avocado
3 tbsp chopped jalapenos
1 tsp pepper powder
1/4 tsp cumin powder
1/4 tsp garlic powder(1 tsp garlic minced)
salt as per taste
1/4 cup lemon juice
1/4 cup sour cream*

Alternative to Sour cream-- 1/4th cup of crumbled paneer with 2-3tsp yogurt and a tsp of lemon juice
