I think you expanded too far too fast. Maybe capture two ancient spots then wait a bit and steady the population/food. It's good to examine these things as you edit. Hind sight builds progress but this looks like a fun little game. I look forward to playing it myself <3

The plant people are probably a breed of mandrake root. It wouldn't be a surprise if they eat meat or vegetables since they have autonomy according to mythical tales.

I feel like plant people eating carrots is the same as us eating other animals. as long as they're not literally eating the own it's not cannibalism.
