Filling:

1 lb tomatoes, sliced 1/4-in thick
1 tsp kosher salt
2 cloves garlic, minced finely
1 large white onion
butter or compound butter
4 oz goat cheese
1 egg, lightly beaten with 1 TBSP water
Salt and pepper to taste
1 pie crust
2 tablespoons fresh herbs (Your preference)

I really appreciate that you've done a recipe with goat cheese. I am allergic to cow's milk, and I never thought to pair goat cheese with tomatoes. I have NO idea why not?!?!
