For anyone watching now, Wüsthof also makes an "extra wide" Ikon paring knife that rises higher above the board. The extra wide knives in many shapes might have been a more recent addition to the Ikon line.

For me, the wet stone sharpening is part of the fun. I have always been a bit of a JDM fanboy and it seems my fanboyisms extend to the knife world.. I much prefer the traditional Japanese knives

I am addicted to kitchen knifes and keep buying more and more. I have a good mixture between german and japanese, both have better and not so good brands, but overall I absolutely love both. Wusthof is only one of a few great brands from germany, Messermeister or Fissler have some interesting knifes as well (and more). Wusthof SHOULD be compared to Global, as those would be the representative brand of each country roughly offering the same respectively in each culture .

Overall the effort of sharpening each the 60+ or softer german steels is no different overall, one you sharpen more regulary and often, the other one you sharpen a few times per year (and it's only sharper than the german one initially after each sharpening), but then you spend a lot of time on it, .... not much gained or lost on each side. .. But since I travel more to japan than germany these years, i keep buying more japanese once
-> Also don't forget in Japanese knife shops there are a lot of carbon steele knifes on sale as well !!! (you rearly find non stainless steel knifes anywhere in germany)

My hands are like literal shovels and granted this is the pairing knife, whilst it was the Wustof Ikon Chef knife that I played with at the weekend, but I found the handle to be really, really good even for mitts of my size. The pairing knife was on display and on casual observation I didn't think when looking at it that handle needed to be larger.

It's weird that you made that disclaimer in the beginning about different knives being made for different foods.
As a casual viewer of your channel I can tell you lean more towards japanese knives but I never thought your video shows and examples of superiority or bias, if anything it'd be because you make more eastern dishes.

Frankly, I think a lot of reviewers on youtube think others are highly interested in what they "like and don't like". I bet fewer people care about this than these reviewers think. I wonder if people would be more interested in objective observations about the features of this or that knife (or other item) and the realistic impact that those features have on the value, utility, and desirability of a knife. Just, IMHO, of course. Many thanks.

Why do you compare a pairing knife with a petit knife??? It doesn't make any sense. Tbh. They are 2 different knives with different usage. .

Geometry means the Japanese knife will always be sharper. Period.

You invariably choose to ignore Wusthof’s correct pronounciation, yet aleays make sure to pronounce Japanese names correctly. I find that interrsting and quite revealing.
