Nice recipe, but next time, try to start with the onions first and add a quarter teaspoon of baking soda. You'd want to get them really brown, almost like chocolate. The baking soda will break down the cellular structure and prevent it from burning, it'll turn into a paste. You can add a hint of cocoa or coffee powder once you have deglaced it, to deepen the flavor profile.
Oh one more thing, curry rice is usually eaten with a spoon, not chopsticks.
