I always feel scared to bounce midi to audio, fearing that I won’t have as much control over it once is bounced to audio.

A few Months ago, I had the same mindset of samples as you described you had in your younger years. Since I started wtching your tutorials, I started using samples and the diversity of my music really increased a lot. I even had the courage to release my first EP.
