Copycat Pace Picante Sauce

SERVES: Makes 2 cups (16 ounces)

INGREDIENTS
• 1 (6 oz) can tomato paste
• 2 cups water
• 1/3 cup chopped yellow onion
• 1/4 cup chopped fresh jalapeno peppers, with seeds (3-4 peppers)
• 2 tablespoons white vinegar
• 1/2 teaspoon minced garlic
• 1 rounded 1/4 teaspoon salt
• 1/4 teaspoon dried minced onion

PREPARATION STEPS
1. Combine the tomato paste with 2 cups of water in a small saucepan. Whisk to combine.

2. Add all other ingredients to the tomato sauce mixture in the saucepan and bring to a boil over medium heat.

3. Simmer for 30 minutes or until thickened.

4. When cool, bottle in a 16-ounce jar and refrigerate at least overnight before using.

the recipe works great, I don't like heat so only one jalapeno no seeds, but it stays for months in the fridge. I only know that because it got shoved in the back and lost for a couple months.

You make cooking so simple! Great flavor with a minimum amount of ingredients. Terri I love it that your recipe uses the whole can of tomato sauce instead of a partial. What am I going to do with a small bit of leftover sauce, too many recipes elsewhere don’t consider that.

Any chance I can triple this and can it up in my water bath canner? Not sure of the acidity or if I need to add some lemon juice or citric acid…ty in advance! ☺️
