Small Batch Cheesy Potatoes for Two (Funeral Potatoes)

The perfect side dish for any meal. They are cheesy and delicious and you are going to love enjoying them in small batch form. You don't need to wait for a large family gathering or a holiday to enjoy them.
Recipe:
2 Tbsp butter
1 1/2 Tbsp flour
1/3 cup milk
2 cups of diced potatoes (I use frozen hashbrowns)
1/4 cup sour cream or plain Greek yogurt
2 Tbsp butter, melted
1/4 cup onion, diced
1/2 tsp garlic, minced
1/4 tsp salt
pinch of pepper
1/2 cup cheddar cheese, grated
1 green onion, diced
1/3 cup panko bread crumbs
2 Tbsp butter, melted
In a sauce pan, melt 2 Tbsp butter, whisk in flour and then stir in milk. Cook for a minute until it thickens. Remove from heat.
In a bowl, combine potatotes, above flour/milk/butter mixture, onions, sour cream, melted butter, garlic, salt and pepper, cheese and green onion.
Stir to combine
Put into a greased 8 x 5 inch baking dish or a loaf pan.
Combine bread crumbs and 2 Tbsp melted butter.
Sprinkle over the top of the potatoes.
Bake at 350 degrees F. for 40-45 minutes or until heated through, bubbly and golden brown around the edges.
