The perfect side dish for any meal. They are cheesy and delicious and you are going to love enjoying them in small batch form. You don't need to wait for a large family gathering or a holiday to enjoy them.

Recipe:
2 Tbsp butter
1 1/2 Tbsp flour
1/3 cup milk
2 cups of diced potatoes (I use frozen hashbrowns)
1/4 cup sour cream or plain Greek yogurt
2 Tbsp butter, melted
1/4 cup onion, diced
1/2 tsp garlic, minced
1/4 tsp salt
pinch of pepper
1/2 cup cheddar cheese, grated
1 green onion, diced
1/3 cup panko bread crumbs
2 Tbsp butter, melted
In a sauce pan, melt 2 Tbsp butter, whisk in flour and then stir in milk. Cook for a minute until it thickens. Remove from heat.
In a bowl, combine potatotes, above flour/milk/butter mixture, onions, sour cream, melted butter, garlic, salt and pepper, cheese and green onion.
Stir to combine
Put into a greased 8 x 5 inch baking dish or a loaf pan.
Combine bread crumbs and 2 Tbsp melted butter.
Sprinkle over the top of the potatoes.
Bake at 350 degrees F. for 40-45 minutes or until heated through, bubbly and golden brown around the edges.

Welcome to my Kitchen! I'm Leigh Anne, the mother of four adult children and my husband and I are now empty nesters. I know the challenges of learning to cook for just the 2 of you, it feels like learning to cook all over again! After the kids left home, I found that I stopped making a lot of our family's favorite dishes and treats because those recipes just made too much food and I was tempted to eat too much!
On this channel, I invite you into my kitchen each week where we learn how to make small batch recipes with big taste. You can still enjoy all those family favorite recipes, just less of it!I look forward to meeting you in the kitchen each week with a new recipe and video.

We love funeral potatoes but I didn’t want to open a can of chicken soup just for the two of us of us. I knew where to go…..Leigh Anne! Thank you so much. I can’t wait to use your recipe!

Oh you are such a blessing! Just found your channel and I love it. I'm so tired of throwing away leftovers from baking in a 9x13 pan.

Oh thank goodness for these smaller portions! I had been waiting for Easter to make these so I could bring them to a party but I can make them tomorrow for me and my family!!!

Thank you so much for this recipe! Funeral Potatoes casserole is one of my favorites, it definitely is served at Easter. Sometimes I add diced ham and frozen peas and carrots to make it a complete meal.

Thanks for the recipe! Made this for dinner tonight and hubby says it's a keeper. I did make one change, and that was to use real potatoes, dice them and parboil them. We find the frozen Hash Browns much too salty and hubby has high BP, so we watch our salt intake. Oh and used Smoke Flavored Cheddar cheese because that was open in the fridge! Just enough for the 2 of us. Thanks again Leigh Anne.

For those of us that can't waste the canned cream of chicken soup, you can freeze into portions for several recipes that need cream of soup. Let it thaw and use for recipes.
