Hey PMGK, what you've got here certainly looks delicious, but I understand why you would get a certain amount of flack about it. I'm always interested in "authentic" ethnic recipes. Unfortunately, with dishes like this, there is a different way to make it for every cook making it and no one recipe is necessarily more "authentic" than another. I happen to live in an area with a large Asian population but it has only been that way for maybe the last ten years. I would have been thrilled to find this recipe ten years ago because I could have made it with items easily available at that time. Now I can by ya-cai and four different kinds of doban jian, fresh noodles and about 10 different brands of fish sauce. I have 3 or 4 other "authentic" Asian noodle recipes to try but if I get around to yours I will certainly get you some feedback on it. Tonight I made yu xiang ji si (chicken in yu xiang sauce) with rice and cold sesame noodles for the wife and I.

I've never had Dan Dan Noodles before.  I think I like it with the soup version but will have to use rice noodles as I can't eat gluten. As soon as we finish the crock pot full of cowboy beans, we'll try this.  I love soup.
