There’s also the difference between icons and idols. God’s commandment was in reference to Idols. God later commanded His people to make icons including icons of angels more than once and one icon was used to heal

Yes, and an important distinction: we venerate the image of God on the icon, NOT the icon itself or the material which it was made out of! It's like a photo of a loved one: it's not the paper itself you care about, but the image of the person in it.

You make a valid point, to which one must add, in support of the Orthodox practice of ikon worshipping, that the commandment given to Moses was forbidding the creation and worship of figments of imagination endowed by the worshipers' minds with false attributes of divinity. God never forbade the representation and reverence of the true Divinity, in as much as it is revealed to men. What was forbidden in the Old Testament due to the incapacity of the people of that age to distinguish between true divinity and idolatry, is no longer forbidden in the New Testament, because under the law of grace Christians have the capacity of discerning true divinity from idolatry, since they are those who brought down the idols in the entire Antiquity, many a time paying with their lives for that, and being granted for that the supernatural status of their undecaying relics, which is also revered in Othodoxy, not as idolatry, but as a recognition of God's work and power in the bodies of those holy men.

The depictions served their purpose especially in a time when people were generally illiterate. Growing up outside of the Orthodox Church it was strange to me, it is still strange to me to see people kiss icons. The Orthodox theology is bullet proof but some of the customs and traditions I still don't understand

Where is that permission written? Where is the photograph of Jesus Christ from which a true representation of Him can be made?

I think the problem here is that even if we were to accept that venerating an icon, the cross or even the Bible is not idolatry or worshiping that object, the problem lies in the fact that it is obligatory to do in order to be a true Orthodox Christian. In other words if you do not venerate the icon then you are basically in disobedience to the church and in turn your salvation in jeopardy. So that comparison about a picture of a loved one, although repeated many times, holds no water; because if I choose not to kiss or venerate a picture of a loved one it does not affect my salvation or standing with God.

1Ki 6:23  Inside the inner sanctuary Solomon placed two cherubim crafted from olive wood, each fifteen feet high. 
1Ki 6:24  Each wing of one cherub was seven and a half feet long, and each wing of the other cherub was seven and a half feet long, so that the distance from the end of one wing to the end of the other wing was fifteen feet. 
1Ki 6:25  Each cherub was fifteen feet high, and both were of the same size and shape,  
1Ki 6:26  the height of one cherub being fifteen feet, as was the height of the other. 
1Ki 6:27  Solomon placed the cherubim in the middle of the inner sanctuary, with their wings spread in such a way that the wing of one was touching the one wall and the opposite wing of the other cherub was touching the opposite wall. Furthermore, their wings in the center of the wall were touching each other wing-to-wing. 
1Ki 6:28  Each cherub was overlaid with gold

1Ki 7:36  Hiram engraved ornamental cherubim, lions, and palm trees on the surfaces of the supports and frames wherever there was space to do so, and encircled the artwork with wreaths. 
1Ki 7:37  He made ten identical water carts by using the same plans, castings, and shapes for all of them. 

1Ki 8:6  After this, the priests brought the Ark of the Covenant of the LORD to the place prepared for it, into the inner sanctuary of the Temple, under the wings of the cherubim in the Most Holy Place. 
1Ki 8:7  The wings of the cherubim spread over the resting place for the ark, so that the cherubim made a covering over the ark and its poles when viewed from above.

An interesting fact about the first icon of Christ you see in this video. If you notice carefully you will see that in this very old (6th century) icon which belongs to the greek orthodox monastery of st Catherine on mount Sinah from the Byzantine era, the image of Jesus has two distinctly different eyes . This is explained theologically by the two natures of Christ, devine and human ....
