Spring Asparagus, Pea & Radish Salad 🥗 👇
Be sure to SAVE this so you don't default to making a boring salad!
✅ Ingredients:
🌱3 oz of arugula
🌱3 oz of spinach
🌱1 bunch of fresh asparagus
🌱1 cup frozen peas
🌱1 Tbsp chopped fresh parsley
🌱1 Tbsp chopped fresh chives
🌱 3 oz smooth goat cheese, unflavored
🌱 1 tsp lime zest
🌱30 oz fresh lime juice (1.5 limes)
🌱 1 tsp whole grain mustard
🌱1 tsp honey
🌱 Salt and pepper to taste
🌱2.5 Tbsp olive oil
🌱1 cup thinly sliced fresh radishes
🌱1/4 cup almonds, roasted, unsalted
🌱 Optional: fresh mint
Instructions:
1️⃣ Place arugula and spinach in a bowl.
2️⃣ Bring a pot of water to boil. Cut asparagus into small pieces, about 2 inches long. Add asparagus and peas into the water. Cook for 2-3 minutes
3️⃣ Place asparagus and peas into an ice bath. Place on baking sheet with a paper towel. Pat dry and set aside.
4️⃣ Chop the fresh parsley and chives, set aside. Place cling wrap down. Add fresh herbs ontop. Roll goat cheese over it. Set aside.
5️⃣ Zest and juice lime. Add mustard, honey, salt and pepper to taste, and olive oil. Whisk together.
6️⃣ Slice radishes on a mandolin.
7️⃣ Add asparagus, peas, radishes, almonds, and goat cheese onto the arugula and spinach. Toss together. Add honey mustard dressing and mix together.
