For anyone curious: this works because acids (like the acetic acid in vinegar) can denature protein just like the heat from cooking does. So the vinegar basically 'cooks' the outermost eggwhite.

My 93 yo Dad, a chef (among other things!), showed me this! He also showed me how to make it with a vinegar/salt mixture in roiling water if you're just making a couple of them. He actually showed me a LOT of shortcuts that these YouTube chefs are now teaching new upcoming cooks! It's awesome to see!❤

Mei, you’re a Top Chef for good reason. I’m an advanced home cook who has just the weirdest couple of struggles left to get right for most meals, and properly poaching multiple eggs is a huge one. Can’t make Benedict for four or more people poaching one egg at a time and expect everything to come out right and at the perfect temps. So 🙏🏼 thank you!

This is very common in hotels. You might waste a couple of eggs at the end of breakfast but not as many as if you try to poach a lot straight off. The biggest hack she didn’t mention is use your freshest eggs for poaching, your older eggs can be boiled as they’re easier to peel. This is the only time I know where you don’t stick religiously to stock rotation.

The other huge benefit of this is that it clears the thin runny part of the white.
You get similar results by cracking the egg into a sieve coarse enough to drain the runny part without harming or draining the rest, then that goes into the poach.

On my last cruise, I asked them how they do their poached eggs so quickly and perfectly. They boil the eggs slightly, ice bath, then when someone orders eggs benedict they just crack it into the simmering water for a little bit

I only ever add about tablespoon of vinegar to the almost boiling water when I poach eggs. Also to do a large batch I crack all the eggs into one container, stir the water then add them one by one to the water.

We do this in Turkey and its one of my favorites. But we also put some Joghurt on it (garlic yogurt) then you pour a little bit butter on it (melt butter, add red pepper when it boils pour it on) you gotta have the garlic yoghurt ready because the egg must be hot, yogurt cold. We eat it with bread but its also awsome on its own. Btw, if your too lazy to do this water vinegar thing like me, i crack the egg in to the laddle. I slowly put it in to boilinh hot water. Works like a magic and a more fast and easy. Hope I could explained it clearly:) lots of love 🤍
