I beg to differ with this guy. I read recipe books from the 1900s and there are channels here that showcase the variety of foods from the 1800s. The idea that America was this barren wasteland of culinary stagnance conveniently ignores so many of the recipe books throughout time. Ethnic variety in foods always existed here, I have no clue what this guy is talking about. Maybe it lacks context since it’s a snippet of an interview...
