I have the much cheaper Kanso version in AUS10 steel. They have the same Tagayasan wood on the handle. I thought it odd that Shun would put that wood on the very top tier Fuji and the economically minded Kanso.

I have found the wood porous and that food can get stuck in the micro grooves and holes. The wood seems very durable. I quicky rinse it and use a toothbrush every so often. The crud buildup is real, but manageable.

Out off all the Shun I've handled I like the Premier in grey the most. SG2 is very nice, but VG10 will always do the job. The weight, grip and style of premier is my thing.
