If you have dried beens that are several years old, soak them overnight with baking soda in the water to soften them, as well as gently ferment them to reduce gas issues.

Pressure cooker works very good too. Unsoaked beans are ready in under an hour.

You should soak the beans overnight in water with a pinch of baking soda per cup of beans. Drain and rinse, then cover with water and cook. You don't need to cook them WITH the soda. Soaking overnight and draining will reduce the phytates that make them hard to digest. You also don't need that much b soda.

I was bemoaning how my beans were still hard, after brining, their ordeal in the pressure cooker…a coworker asked if I put the tomatoes in the batch (I was making Charro Beans), and when I said yes, she said, “don’t!”!
I remembered the next time, and her advice worked! 🤗

I'm wondering how the flavor of the baking soda beans was. Cause when you leave them in a slow cooker for a couple hours, it doesn't really matter how long it takes.

I've never been in that much of a rush that I need my beans to cook 15 minutes faster.

Use an instant pot. You don’t need to presoak beans and most cook in under 30 mins. I cook them in bulk and freeze them in portions.

Baking soda will also tenderize meat. Just remember to wash it off prior to cooking.

We’ve been doing this for years for all our legumes. Including soaking overnight, pressure cooking or for instant pot cooking.

How does this change when you add tomatoes? I often have my beans toughen up when I add tomato paste or puréed tomatoes to my beans. Do I need more baking soda? Do I just cook them longer? I have started adding the tomatoes at the end of the cooking process, which does help somewhat.

Have you tried brining beans for an hour? Also...add aromatics such as onion, garlic to your cooking water to add flavour.
