My Day: The chef behind Lyon's taste

Lyon, where the Saône River is absorbed by the Rhône before rolling on toward the sea, where the world of modern food was born, and where it continues to evolve. There is a saying that "Lyon is the city to go eat in right now because it's been the city to go eat in for at least 100 years." La Mère Brazier is a two-star Michelin restaurant that was established in 1921. Behind the fancy decor, Mathieu and his assistant are creating delicate classic cuisines with modern methods and ideas.
