Blue butterfly pea flower does the same thing as the cabbage you are using. Purple onions/red onions(same thing) make a pigment when diffused into hot water also. Adding lemon turns the color. It's the same deal with changing the PH balance of the infusion, simple science, but neat science.

The same goes for butterfly pea tea. It starts out blue, but add some lemon juice and it changes to a purple or magenta, depending on how much you add. I love natural things like this

In Germany there are different ways to cook cabbage. One is more acid and one more basic, which leads to two different names for it. The one name (Rotkohl) contains the word red and the other (Blaukraut) the word blue

Many blue flowers work the same way! Violets, butterfly pea flowers, grape hyacinths. And you can turn any one of those into tea. At least for the hyacinths, you need to be careful about the amount you consume, but a simple tea is completely safe.

Ye actually learnt about this in chemistry class. The cabbage has sone enzymes which change color depending on the pH
