Burn your PASTA, You'll Thank YOU!! Seriously, this is good. Not very many many recipes can still come out good if you over cook them, or BURN them, but burt pasta has a special flavor that comes from toasting the starches of the pasta itself and by burning and caramelizing the sugars in the tomato sauce on top of that you are adding in special kick with some chili peppers for a really unique dish. This is Spaghetti all'assassina or burnt spaghetti and its really special!

Your first "spaghetti all'assassina" sounded perfect. The second, with Monica, was like a different word all together. But I love this dish however you pronounce it.

My mom burned some left-over spaghetti when heating it up for us when I was a kid. This was before microwaves, of course. And I've been trying to recreate that burnt dish ever since. Finally found spaghetti all'assassina a few years ago. Didn't know my mom was ahead of her time!

BTW spaghetti all'assassina don't need cheese. It's ok without like aglio olio e peperoncino. You could try that recipe too. Or olive tomato sauce with spaghetti

Before microwaves came about, leftover Sunday pasta was ALWAYS fried in a super hot pan with olive oil. (I still use the cast iron pan my mother used for this.) Crispy, caramelized, just delicious! It's actually my favorite way to have pasta, but there's so rarely leftovers to fry the next day!!

I've been air frying leftover shaped pasta for awhile. Spray on oil with a fine mist sprayer and bake til it gets browned and crispy. I will probably try this, too. Love that taste!

One of my favourite pasta recipes, I have it at least once a week . No need for cheese, just some garlic bread ciabatta and a decent red wine . The burnt, ‘caramelised’ bits add a delicious crunch that doesn’t taste burnt and the whole dish is rich and lush .

When I’ve tried a variation of this, the clean up on my pan was incredibly difficult. I’ll have to try yours….maybe I didn’t use enough oil or something previously. Thanks for the video!
