There aren’t strict measurements for this type of dish, it’s all about fresh herbs and personal preference. So use this recipe as a guide rather than a rule.

Ingredients:

A few potatoes
2 beets
Oil
Salt&pepper

500g soft cheese (quark/ farmer’s cheese)
A handful of dill, chives, parsley
1 small regular or spring onion
Flax seed oil, cold pressed
Garlic

Method:
1. Preheat the oven to 200°C (390°F).
2. Wash and slice the potatoes and beets. Toss with oil, salt, and pepper, then bake for 30–40 minutes until tender.
3. Meanwhile, finely chop the herbs, onion, and garlic.
4. In a bowl, mix the soft cheese, herbs, onion, garlic, and flaxseed oil until combined. Adjust flavor with more oil, salt, or garlic to taste.

Omg das sieht fast genauso aus wie mein Rezept 🤩! Bei mir kommt aber ganz viel roher Knoblauch drauf und die Kartoffeln und die Rote Beete werden bei mir nur gekocht. Kann nicht fassen, dass jemand fast das selbe Rezept wie ich erfunden hat! Natürlich nicht vergessen, alles in Leinöl zu ertränken... Perfekt 😃👍

Very True. Love it especially with some fried and bread battered cauliflower. You wouldn’t have the need for meat then at all with that dish.

I love that German restaurants that are focusing more on healthy and nutritious meals are offering this simple meal. It's definitely a staple for me [a German who's been living abroad since 2006] in spring and summer.

I usually use those really small, round, smooth potatoes or sweet potatoes and add carrots, turnips, brussel sprouts and/or beets like you did here. And as a "side" I add a small mixed salad or roasted endives. I grow the herbs and some of those veggies in my garden.

Im not vegetarian but i think the thing i appreciate about your dishes is that you don't usually use fake meat, you just make banging good dishes with vegetables and cheese

My mum (yes, we're German) makes a dip made of yoghurt, crème fraîche and feta cheese plus fresh herbs to go with oven baked potatoes when we have barbecues. When I moved out, I started making that dip for almost every time I had potatoes. Had it yesterday with some baked green asparagus and tahini dressing and it was so good!
