Since nobody else has said it, you tested the scalpel wrong. Instead of gently applying pressure onto the tester as you should, you jabbed the scalpel onto the tester. Using the sharpness tester wrong where convenient is a theme I've noticed in more than a few videos of yours. Not saying your sharpener isn't good, just saying that you are using the tester wrong.

Tapping the scalpel makes it seem sharper. You gently put on the precision pairing knife so it's more accurate.
