The One-Pot Meal You'll Actually LOVE: Shrimp Orzo Pasta Recipe

This recipe for shrimp orzo pasta hits to spot, especially during busy days when all you want is something nourishing and filling without creating too much of a mess.
Makes two servings
Ingredients:
- One 400 g bag of frozen shrimp, thawed and peeled
- 1 cup orzo pasta
- Juice from half a lemon
- Half an onion, chopped
- 2 garlic cloves, minced
- 1 bouillon cube+ 2 cups of water -or- 2 cups of broth
- 4 tsp olive oil
- 150 g of frozen chopped spinach, thawed
- Salt, chili flakes, dried oregano, paprika
- 2 tbsp butter
- (Optional) crumbled feta cheese for topping
Directions:
Heat 2 tsp olive oil over medium-high heat and add half of the minced garlic. Add the shrimp, cooking in batches to avoid overcrowding the pan. Season with salt, chili flakes, paprika, and oregano. Cook for 1 minute, flip, and cook for another minute. Remove from the pan and set aside.
To the same pan add 2 tsp olive oil and onion. Cook for about 3 minutes until golden. Add 1 cup orzo pasta and the rest of the minced garlic. Stir for about 30 seconds.
Add 2 cups of broth or water. Bring to a boil. If you used water, add 1 bouillon, quickly mix until dissolved. Reduce the heat to low.
Let the liquid reduce by half, about 5-8 minutes, and then add the spinach and the cooked shrimp. Stir and even out. Cook until the rest of the liquid is absorbed, about 5-8 minutes.
Turn off the heat and add juice of half a lemon and 2 tbsp butter. Mix until butter has melted. Serve hot, sprinkle with crumbled feta cheese if desired and enjoy! !Buen provecho!
