A twist on scallion pancakes 💕

I was inspired by KT food stories, and I created my own version of scallion pancakes!

Ingredients
-300g All Purpose flour (2 cups + 2tbsp) - more flour might be needed if you’re using cups instead of weighing, you’ll know if your dough feels too wet and sticky
-3/4 c water
-1/2 tsp salt
-1 tbsp cornstarch (to coat before cooking)
-3 tbsp toasted sesame oil (or butter)
-1 bunch scallion, chopped green parts only
*optional: 2 c favorite shredded cheese (if not using cheese, sprinkle on salt 🧂 instead)

Dipping sauce (mix it altogether)
-2 tbsp soy sauce
-1 tbsp white vinegar (adjust to your taste)
-1 tsp sugar
-1/2 tsp sesame oil
-optional: gochugaru Korean chili flakes, sesame seeds, green onions

Directions
-Pour water, salt, and then flour into mixing bowl
-Mix at speed 2 using knead attachment for ~7 minutes (10 minutes if by hand)
-Form into a ball (if it doesn’t form into a ball, add more water 1 tbsp at a time)
-Cover and let it rest for 10 minutes
-When ready to roll, knead for a few seconds to form a smoother ball
-Divide into 5 even sections
-Cover and let it rest for 5-10 minutes
-Roll each one out to ~8 inch circles (be prepared for a workout haha)
-Stack the layers on top of each other with a little flour between each -I layered 5 but it was too uneven when doing that, so I had to flip it over to roll the bottom side up.
-Then I separated all the layers and stacked 2 to 3 at a time and rolled it again.
-Roll out to 11-12 inches - layering them makes it thicker and easier to roll out to a thinner layer
-Separate each layer slowly and carefully
-Spread toasted sesame oil or butter with pastry brush onto the pancake
-Sprinkle on chopped green onions
-Sprinkle on cheese or salt for flavor
-Fold each side into the middle, then fold up and down like in the video
-Sprinkle with corn starch for an extra crispy crust
-Heat pan in medium
-Add oil and cook each side for 3 minutes
