Scallion Pancakes ASMR

Ingredients:
Dough:
- 2 cups of flour
- 1/2 tsp kosher salt
- 1/2 cup hot water
- 1/4 cold water
Filling:
- 1 bunch of scallions
- Salt
- 3 tbsp vegetable oil
Frying:
- 2 tbsp vegetable oil for each pancake
Recipe:
1. Thinly slice 1 bunch of scallions.
2. Whisk together 2 cups of flour & 1/2 tsp salt in a mixing bowl.
3. Gradually mix 1/2 cup hot water into the bowl.
4. Gradually mix 1/4 cup cold water into the bowl.
5. Knead the dough until smooth.
6. Oil the bowl & dough. Rest it covered for 20 minutes.
7. Divide the dough into 6 even pieces.
8. Roll the pieces into balls and set them aside covered.
9. Roll the dough ball into a thin rectangular sheet.
10. Brush 1 tbsp vegetable oil on it.
11. Sprinkle salt onto the sheet.
12. Add 1-2 tbsp chopped scallions onto the sheet.
13. Roll the sheet into a long tube.
14. Roll the tube into a cinnamon roll shape.
15. Roll it into a circle. Repeat for the other 5 balls.
16. To store, stack the pancakes on a sheet of parchment paper between them. Place them in a Ziplock bag and freeze.
17. To fry, add oil to cover the pan.
18. Add the pancake to the pan and flip every 2 minutes until golden brown. Press down on the pancakes to ensure even cooking. Repeat for the other 5 pancakes. Add oil again if necessary.
19. Transfer the cooked pancakes to a paper towel.
20. Once cooled, cut a pancake into 4-8 even slices, and enjoy!
